Why do all my voice memos/voice recordings transfer over to my Samsung music? I tried hiding the folder and it didn't work, is there any other way to disconnect the 2 from eachother?

Had this issue too.
Go to Samsung Music, click the folders tab -> Hide Folders and select whichever you dont want to see and click apply.
