After the latest update, I can't have a photo as my AOD anymore. Does anyone know how to change that? Thanks.

You can go into Gallery and find the photo you want to add it to AOD. Tap 3 dots >> Set as Wallpaper >> Always on Display
If you want to change the photo, just do the same with the new photo.
If you want to remove it from AOD, Settings >> Lock screen and AOD >> Always on display >> Show Lock Screen clock >> Remove
