How do I turn off the AI 'features' to the greatest current possible? I read a post on how to do so on an S24 but the interface seems to be different so I can't use the solution on my phone.

In system settings there should be an app called AI core, go ahead and disable that

No joy

No app called AI core or anything similar installed on my phone.

I'm assuming you're referring to the Bixby AI? If so, I did the following and it worked but I also do this with nearly every app I don't use and those that are bloatware.

I went into the Apps (make sure you also enable to see all system apps) within settings and uninstalled every possible update from anything labeled Bixby, if I wasn't able to delete or toggle the DISABLE button (a lot of them) I went into the PERMISSIONS and took away every option I could. I also disabled it from accessing mobile or "background data", restricted battery usage, and turneded off every option possible. Even if you can't delete it you can absolutely keep it from using data in the background and most of them you can restrict the battery usage.

I forgot to mention that you need to get into the Samsung Store and disable auto-update
