Can anyone tell me what the difference between Google Photos and Gallery is and also Store and Play Store is? Why does Samsung have two different photo apps and two different stores? Why dont they just pick one or the other? Does anyone like one or the other better? Any advice?

Samsung does not by default have the Google Photos app on your Samsung smartphone. The only default photos app is Gallery, which is Samsung's. For the app stores, the Play Store is the universal Android app store while Galaxy Store is the Samsung specific app store. Some apps on the Galaxy Store are exclusive to Samsung such as Good Lock and could possibly be more optimized, but there are significantly more apps available on the Play Store. So, when it comes to photos, you likely downloaded Google Photos from the Play Store some time before and you never realized that it is not the default photos app. For which app to choose, it's all personal preference. However, Samsung's Gallery app does have built-in AI features for editing and it is also linked to Samsung Studio for editing videos, so you'll probably want that if you want the most features. For the app store, use both. If you can't find the app you want on the Galaxy Store, look on the Play Store.
