My s23 ultra when connected to Bluetooth does not add media. Calls and audio is the only thing working.

Why would you think that audio does not include media? My headsets always only say calls and audio.  Audio is included in most media.  If you are watching a video, there's an audio track. Listening to music? Also audio. So, what do you think is not going to your headphones?

When connected the Bluetooth displays connected for calls , audio, and media. Also I try to play music and nothing.

All the phones I've ever had, Samsung and non Samsung, I never saw my headphone connection say calls, audio and media; only calls & audio and I've never had a problem listening to music since media is basically audio. Have you checked the volume control panel to make sure the BT audio slider is all the way up?

Get in your car and pull down the menu. Tap Bluetooth and you see all 3

I thought you were referring to the BT connection with headphones, not a car. When I connect my headphones to the phone, all it ever says in the BT connection is that it's connected for calls and audio.

I don't play music through BT in my car.  I have my music in my car's hard drive, or I use a USB drive.  I've never actually gotten Bluetooth audio to work in the car, but I don't really need it to, since the car has a fairly large hard drive.  When my phone or Android Auto is connected, the sound comes out of my car speakers and that is sufficient for me.
