Is there any way to avoid or turn off in-camera image sharpening (I think that's the correct term but I may be wrong)?

More often than not I find that, when taking landscape photos with my S23 Ultra, the edges of some items are artificially rimmed with white bands in the JPG image (see zoomed example attached).  I think this is an artefact of in-camera image enhancement but I'd like to not have it happen and do the enhancement myself with a post processing application.

Many thanks in advance.

If you're using photo mode, it's intelligent optimization. Default is maximum. Go into settings and turn it down to medium or minimum.

Agreed, the display choices sre absolutely horrible. The %charged in reverse highlight is hard to read, and when charging phone no longer displays the bright green circle, so unless you turn on the phone you have no idea if it has made good contact with the charger. Just awful.

What has this to do with the subject of the original post?

If you have scene optimizer, turn that off.  If you have intelligent optimization, do what everyone else said.  Different phones have different settings, depending on capabilities.
