Galaxy WatchIt shouldn't be prompting you to set up Samsung pay spontaneously. Unless you are long pressing the back button, it should not even pop up. Something has gone amiss. I recommend deleting the cache partition of the watch or doing a complete reset and then restore your backup (do make sure you have a backup first). Wallet can't be uninstalled or disabled; you can only not use it.

Galaxy WatchThe tech made me reset it a few times but didnt work. It just started happening 3 weeks ago. Have had the watch for almost a year now.

Galaxy WatchYou reset the watch several times and it did not stop the behavior. I am not sure that a reset also deletes the cache partition. One would think it would, but I seem to remember reading somewhere that it does not. You can try that and see if it helps. Also, when you reset the watch did you restore the backup or start from scratch? It might be worthwhile to start from scratch. However, deleting the cache partition is the least disruptive thing to try first.
You said you spoke to tech. Did you call tech support or have a text chat with a technician? Have you put in an actual error report and upload your logs? That may be the way to go here. When the developers examine your logs they may see what the crossed signal is.

Galaxy WatchYou can't re-map the bottom button to Google Wallet. You can re-map the home button double press to be Google wallet. The back button long-press is reserved for Samsung Pay.
