Talk about an odd security issue. After installing the latest OS version with the December security patch, all was good, or so it seemed. The Amazon mobile Shopping application is no longer available. Has anyone been aware of this occurring since the last update and would know of a possible fix or work around? Using the Amazon website as an alternative is certainly not the answer, imo.

@Spedup The Amazon Shopping app is working fine on my S10+ Tab. It is using Android 16, UI 8.0, and December security patch level.
Have you tried wiping the device cache of the Tablet?

Are you saying you had it installed and it seemingly disappeared from your tablet? If so, go to your home screen settings (long press or pinch in on the home screen). About 2/3 of the way down will be a "hide apps" option. See if Amazon somehow got stuck in there.

I was on it today on my Tab S10+. Same software.

I suggest following @Mujibar advice and check to see if it is hidden.

DId it merely get removed from your home screen, yet still exists in your app drawer and app list in settings?  If it's hidden, unhide it.  If it's not hidden and just off your home screen add it back.  Worst case is go to the Play store and reinstall it.
