What setting can I use to automatically show lock screen just by touching the phone?

For lock screen, you can check the Advanced Features for the double tap to wake feature.

For the Always on display, you can set it to view on touch, as opposed to being on all the time.

While I'm not certain which answer you are seeking, I believe that you may be looking for the first option. Sure, there's no option for touching it once, but a double tap doesn't make a big difference.
