I just finally figured out the Unable to mute group messages in text issue on my Galaxy S20+. When you're looking at all of your text messages from the main messages screen, you just press and hold the screen for 1 second right over the group text, and the option to mute (it's just a little bell) or delete pops up on the bottom of the screen.
