Galaxy S21For example: I'm using a wireless charger while using the DeX environment and according to AccuBattery I'm losing about 10%/hr, which seems accurate. But, the Samsung battery notification says it'll be done charging in X minutes when it really ought to be telling me how much time left until the battery is dead.

PS. This is also an issue when the phone is too hot and charging slows down to a crawl but yet again the UI seems to be oblivious to this and it'll give an incredibly inaccurate/ambitious charge time estimate.

The battery that tells you how much time you've got left before it dies is a thing where you go into your battery settings when it's not on a charger it be counterproductive to do that when you're charging it as for the overheating you might want to look into a lower charge like a wireless charger with a heat sensor that can regulate temperature or not using a C2C cable
