Galaxy S21@Ronanklan Is your phone a carrier phone? Did you by chance get it unlocked and move to another carrier?

Galaxy S21@Ronanklan Since your phone is running T-mobile firmware, it is looking for an update to that firmware. If Metro has different update servers than T-Mobile, the update won't be there.
If you have a T-Mobile SIM (active or not), you can temporarily install it in your phone. The phone will read the T-Mobile update servers info from the SIM. Then you can use Wifi to check for an update.
