Galaxy S21Look for the contacts app in the apps list in settings. Go to the storage section and delete the data and cache. This will not remove any contacts, only any customizations (like custom ringtones). This should restore the edit function. Another option would be to open the Contacts app (not the contacts tab in the dialer), open the side menu and tap on manage contacts and move all your contacts into Google. You will then be able to edit them from the website contacts.google.com and also have them backed up. Your contacts should be syncing with Google by default (unless you turned that off at some point), so you can check if they have been, and you should be able to edit them there.

Galaxy S21Your messages contacts are your phone's contacts, you don't move them you add them. There should be an option to add a participant to contacts when you are in a chat. Go into a chat, tap the 3 dot menu, select "details". In the panel with the name(s) of the participant(s), next to the name is another 3 dot menu. Tap that and you will have the option to add to your contacts.

Galaxy S21Are they not syncing with Google? Where are they not syncing?
Go to settings/apps/contacts. Tap on contacts and scroll down to the storage section. Tap on storage and then tap on delete cache and delete data. This will not delete any contacts, but will remove any customizations, such as custom ringtones, group designations, favorites and the like. You will be able to recreate those groups and customizations. Your contacts should then start syncing again (if you have sync with Google on). If this does not fix the issue, try deleting the phone's cache partition.
1. Power off your phone. Hold Power and vol up buttons until Samsung Logo appears
2. Let go of both buttons when you see the Samsung Logo appear on screen. There will be a delay while it enters recovery mode.
3. Use the volume buttons to navigate through recovery menu options and highlight āWipe Cache Partition.ā Press power button to select this option. Confirm by navigating to the yes response and tapping the power button to select.
5 .When wiping cache partition is complete, "reboot system now" should be highlighted; press power key to select it. The phone will reboot as normal.
Remember to keep up with regular phone optimizations by turning on auto optimization and choose a day and time to automatically restart your phone. Phones need to be restarted regularly to clear out any excess data bits hanging around.
