Contact your carrier. They need to set up the eSIM anyway. They can answer your questions.

My question is can I use the eSIM, PLUS two other SEPARATE nano SIMs from two separate carriers.

In other words, eSIM for international travel with the nano SIMs for domestic use.

Found the answer elsewhere;

You can use up to 2 SIMs on your Galaxy S21 devices. This means 2x physical nano-SIMs or 1 physical nano-SIM + eSIM).

Again, my answer is to contact your carrier as the phone may be capable, but the carrier may not allow it.

I don't know all the other carriers but tmobile has a 15$ montly nternational service (you can talk as long as you want and you do no pay more than that) and you may cancel it at any time.
That's what I use when travel internationally.
Perhaps the other carriers have something similar contact them and find out
