Does anyone know why all the apps are confided in a rectangular space, instead of filling the whole apps space?

I'm guessing you mean when you open an app it isn't full screen and you get blank bars top or bottom or both. If so go to settings->display->full screen apps. Most apps can be set to display full screen there, but not all apps have the ability to display full screen.
