I'm not sure if I'm naming this correctly, but, it's the pull down screen that shows additional control buttons like the flashlight, bluetooth, wifi, do not disturb, etc.
Does anyone know how to organize and or delete the order of these control buttons ?

There maybe several screens there. Touch the circle with the plus sign in it to add or remove items. You should be able to drag the items where you want them.

scroll to the right most menu and tap the plus icon. You'll enter edit mode and you can hold on buttons to move them. I think you can also do it through the wear app on your phone.
