Why is there not a way to change the times I take my meds? The time I put in was just me testing it out, but now I can't find a way to change it to the right time for me.

Open Samsung Health
Scroll down to Medication
Scroll down and tap on Your Medication
Tap on the one you want to edit
And click edit

So I have to edit each one separately?

Yes, you will have to edit each med separately.

Yeah, you have to edit each medication you added. You can't edit them all at once
