My Samsung Email app is missing the Notification categories at the bottom of Lock Screen Notifications, I am unable to change the notification sound. Many posts told me to go to "settings > notifications > advanced settings > manage notification categories for each app", but that is not there either.
Those steps are for One UI 6.1 but your S23U is still on One UI 6.0? You can check for the update.
For One UI 6.0, I think you can press and hold on Samsung email app >> tap "i" >> Notifications >> there should be Notification categories at the bottom
