Would my S24 battery health drop if I unplug the charger halfway through (not fully charged) and use it for 10-15mins, before plugging it back on again until fully charged?
Yes, but depends on what you do with it during that time. If it's on standy-by it'll barely lose any battery, playing a game on the other hand, might use up some battery, some percentage.
Maybe if you do it frequently, but I can't really see it doing much harm if it's an occasional occurrence. You do know you can use the phone while it's charging.
