I set up water reminder on the Health app so I would get them on my galaxy watch 6. Yesterday it worked, today it stopped. None of the settings have changed. How can I get this working again?

I can certainly understand your concern with your watch reminder no longer notifying you and I would be happy to look into this further for you. The first step I would recommend is clearing the cache for the Samsung Health app. Go to settings > apps > Samsung Health > tap on storage > tap on force stop then clear cache.
If you have tried clearing the cache and are still experiencing these symptoms, I would recommend removing your target settings and re-adding them as well as any schedule you may have set.
