Instead of a choice between an infinite scroll note & pages, can we instead consider it less as a format for the note itself, and more of a view (think Google Docs on mobile).
This way, you can always choose to view a note as an infinite scroll on a phone, but separate pages when on tablet. This would allow for the best balance between screen real-estate usage as well as functionality based on device.
