I can understand the inconvenience and confusion with the Camera app not displaying the files it is taking or screenshots. First, what file type(s) are these pictures and screenshots? Checking what @MikenSam suggested would be a good start.

If that does not resolve the behavior, it is possibly a third-party application that is the root cause. You can find out using Safe Mode: https://www.samsung.com/us/support/answer/ANS00062983/
If the behavior persists under Safe Mode, it may be time to try a factory reset. Follow this guide carefully, and back up everything you wish not to lose beforehand: https://www.samsung.com/us/support/answer/ANS00062029/
If the troubleshooting is not helpful, the phone will need to be evaluated by a certified technician.
