Color pallet options disappeared

I used to have options for color pallets on my Zfold 6 now I barely have any why did they disappear

I have experienced the same on my Samsung S23 Ultra ever since they introduced the AI "enhancements" in the UI updates.

I can't find any options anywhere in the settings to adjust the overall color palette to something that is less than ugly.
