Will the Samsung screen recorder have any issues with the audio and video from WeChat while recording?

Are you saying that you want the screen recorder to record the audio and video from WeChat?  If so, you have to make sure that "record sound" is set appropriately in the screen recordings settings.

Yes. I have never tried it on this phone. My previous Samsung Galaxy Note 8 did not have that function I think. But definitely third party apps wouldn't work.

Try enabling the settings as shown.  I don't think it would be an issue.

It would seem that any third party app would only record the audio and basically nothing on the video. Is it a possibility that it's because of the great wall? I lived there for quite a few years and definitely had to deal with that great wall.
