How do I stop my phone from adding pictures to contacts? The picture isn't from my gallery. I keep editing the contact photo and it keeps changing it back when they text me.

Which messaging app are you using? This sounds more like an app problem then a phone problem. Have you downloaded any apps recently that may be malicious?

Its from YOUR friends/Contacts. They are sharing their pictures and such using the above picture.
I believe you have to turn this off to stop it from being shared to you.

Which app are you using?
Who are you texting with?
If the person you are texting with is using Google Messages or Samsung messages they set their profile picture. You can't change it.

It's Samsung contacts. Open it hit the 3 dot menu and select settings.
First option at the top.

It's the user profile picture not anything you added in Google messages you can choose who sees your profile picture

If the other person is android/Google/Samsung and has it on share, you will automatically see the picture that they chose for themselves.
