As I'm recommending new phones to a friend, I'd love some feedback on the primary camera differences between the Galaxy S23 and 23 Ultra!

The S23 and S23+ have 30X zoom. The S23 Ultra has 100X zoom.

To clarify, the S23 and S23U 30/100x zoom are digital (cropped and processed). The max optical zoom on both phones is 3x and 10x. Having used both, you can get good photos zooming in to a max of 10x and 30x digital zoom respectively.

One more difference is the size of the main sensors. The Ultra has a larger sensors which means more light gathered. It is 200MP 1/1.3" sensor. The S23 is a 50mp 1/1.56" sensor.

In real world use, you will see more details if you use the full resolution and lower light ability of the Ultra but I often got better contrast and color on the S23 as the Ultra pictures were often overexposed to my eye. This is subjective to the user of course.

Small correction, the S23 does not have an optical 10x lens, only a 3x, it's 10x is an optimized digital crop. The S23U has both an optical 3x and 10x lens.
