I notice some websites say my browser is outdated when using Samsung internet, why is that ?

May want to check the galaxy store for updates

It's up to date, maybe it was just the website or something

Coupe the site not something I get often unless there's a update for it which shows the page saying update available

Is it possible my ad blocker is causing that happen to occasionally?

It's common to get that message; if you're using a VPN or the website doesn't support the particular browser you're using. You can try and clear the cache of the browser. To test use another browser, go to the same website and see if you get the same message.
