Well at least now I know it probably wasn't me, seeing all these other folks having the same problem.  The reason I chose the s25 ultra was only for the camera, specifically astrophotography.  Shoot, man...the pics I got of the Northern Lights with my s22 turned out better than what I got last night!  
C'mon Samsung.  Hubby is considering an upgrade to his ancient s10e, and I'm desperately trying to keep him from going "fruitbowl" (Apple) on this Windows home!

I have the same issues.

The rear camera cannot focus properly objects and the photos are blurry.

I have already updated the software to the latest march patch. Same issue...

That's crazy, when will Samsung release a fix for this major issue??

I'm also having issues with the focus. My Samsung S10+ had much better focus. Background is mostly blurry, when I get close to the subject, one part of the subject can get blurry, like my dog's nose. And I also struggle to manually set the focus because tapping on my desired subject struggles to bring up the yellow square. I sometimes have to tap 5-6 times to bring it up. I am very unhappy with this phone's focus.

I don't have a solution but I found 2 ways to save some of the photos.

One way is to "remaster" a photo. To make this option appear, go to the photo you want to remaster, tap on the 3 dots on the top right corner and tap on "details". Then on the bottom of the photo, right above the details, you will see some options like "remaster" "live effect" ,"background blur" , tap on remaster. This can fix some photos but it can potentially oversharpen an already sharp subject that was already properly focused.

Another way is to go to Samsung Store and download an app called Galaxy Enhance-X. This has various options like removing blur, sharpening a photo, "magic" option, "increasing resolution", "denoise" etc. You can mess with various options and see if any of them improves a photo.

Again these two fixes don't work on every photo but some photos can be restored.

When I take a photo with the S25 Ultra using the 1X lens, the picture label shows it was taken in wide-angle 23 mm. The photos also appear slightly blurry despite holding the phone very steady. Anyone else having this issue with the S25U camera?

1x is Wide angle. 0.6x is ultra wide ..

Ok. So, the default 1X lens takes a wide angle, 23 mm picture. It was not labeled as such on my S23U. Guess that's what confirmed me. Thanks.

EDITED: Yes, I was having the same problem. 1X on the main camera is wide and I didn't realize that since I have a Pixel 7 Pro, which only has ultrawide. I took pictures of my husband and son in bright indoor kitchen lighting and their faces were blurry, the background was fine, but with a yellow tinge to it. I then took the same pictures with my Pixel 7 Pro and the facial pictures were perfect. I took pictures of my dudes again on the S25 Ultra, set on 2x, after reading this post... and they are overly yellow and so was my tan colored woodwork in my kitchen. The facial pictures are overly smoothed out, but passable. I still like my Pixel for people photos. However, the S25 is much better at filming with the video stabilization. Outdoor photos are better. I also missed Dolby Atmos and the Pixel doesn't have that. The speed of the Elite chip is impressive, but I miss the Bluetooth S pen and what it was capable of. (I have that on my S7+ tablet). An audiobook takes seconds to load, whereas on other cellphones, it was minutes. I'm still keeping my Pixel 7 Pro, since I prefer the facial photos on it. Win some, lose some. If I could take the best of Pixel and the best of the Ultra... what a fantastic beast of a cellphone that would be!
