Under "select step data to show"
The only options I have are "all steps" and "mobile phone"

I have read where there should be two other options one being "count only steps from watch"

I don't have that option and I suspect "all steps" means it counts the steps from the phone as well as the steps from The Watch. Which would be double Counting.

Any thoughts on this?

@JerryMo There used to be more options but they removed them quite a while ago. The only other option which seems to appear for those who had old Gear Fit in the past, is the old Gear Fit. 

I have multiple watches and I only see "All steps", "Mobile phone", and my old (unused for years) "Gear Fit2". 

Selecting "All steps" does not double count. The app is smart enough to know that steps which are recorded by both devices at the same time are the same steps.

Thank you. I ask because I went for a walk that counted 2500 steps. Prior to that I woke up. Took a shower, got dressed, walked to my car and drive to the boardwalk. The car is about 50 steps from The boardwalk. Yet when I got home the step count showed over 5000 steps. That's just not possible

Check to see what your step count is before you get in your car and then what it says when you get out of the car at the end of that drive. Driving over a rough road could, in theory, cause motion which simulates steps.
