While I was in a phone call with someone, I turned on my mobile hotspot and plugged in my charger all in a short time frame, and my phone had a short restart that didn't even take 5 seconds. Would too many things at once cause that or is it a bigger problem causing it? My last software update was back in August.

You could have your phone on an auto optimization schedule. This will cause your phone to restart, and its quite easy to forget or accidentally turn it on. Go to settings and tap on device care You will see if the blue toggle is on or off It's worth a try.

I forgot to mention the auto restart schedule was off. I made sure I didn't have it turned on before I came here.

Auto optimization won't restart your phone if it is use, so it's not that. Could be an overheat situation.
