I bought the Galaxy watch 7 ultra from the att store. It pairs just fine, but the mobile service will not activate. I used the members app to troubleshoot the eSIM and it says there is no eSim installed. It doesn't give me the option to scan a barcode to attach a new one either, it just fails to activate with att and gives me an error (EDS4014)

Galaxy WatchThere are many times the people in the store just do whatever they do improperly. Tech Support will fix it. At least they will understand what you are talking about. I think Customer Service only knows how to say it's activated or not activated and maybe activate it. It is my general rule that for anything related to function, I automatically ask for tech support, anything related to billing or promotions, it's general customer service. T-Mobile is great like that, though - if CS can't help you, they automatically transfer you to tech.

Galaxy WatchThey obviously have crappy AI and tech support sounds like Assurian to it. I guess the thing to do would be either to continually tap "0" til you get a rep or say "representative" and when you get a live human, ask for the tech support team, or at least to connect you to someone who knows what they are doing. One of the reasons I left AT&T, humans are hard to find. Worst scenario, you will have to return to either the AT&T store where you purchased the watch or another one (around here, you can't spit without hitting one), where they can set it up correctly.
