Even though I have it set to check every 10 minutes if not moving, during sleep it has now changed itself to check continuously, but only while asleep. Did something change recently with an update?

I believe that is part of the sleep monitor now. They now show a heart rate during sleep chart in your sleep report. That chart can't be shown if the watch doesn't have continuous data. I have my HR set to continuous at all times, so I would never notice a self-activation. I don't know if there is a way to turn it off at the moment if you don't want your HR tracked during sleep, although I don't know why you wouldn't.
In any case, I believe if you set the heart rate monitor to detect high or low heart rates, it needs to be set to continuous monitoring, and may have turned itself on automatically if you did so.
I suspect that eventually they will disable the 10 minute check in favor of keeping it on all the time, as a lot of new features need it on
