I have the Galaxy Watch 4, but I only have an apple iPhone, how can I connect them?

You can't due to the co-development of Wear OS between Samsung and Google.

You would need the Galaxy Watch3 or older.

Like when you turn on you watch, it tells you to start pairing your phone to the watch, but since I do not have android phone, sadly I cannot pair the watch to my phone, I asked if there was a way to skip the pairing process on the watch.... like I remember on the gear s2 there was an option to skip the pairing process

Oh ok thank you! They made it tricky to bypass the pairing, before you just had to click "skip" 😂

Thank you for reaching out. I can certainly understand the importance of being able to pair your watch with your iPhone. As @KennewickMan previously stated, the Galaxy Watch4 and Galaxy Watch4 Classic are not compatible with iOS devices. Please use the following link for more information on compatible devices with iOS: https://www.samsung.com/us/support/answer/ANS00082502/
