I know exactly what you mean, @Kevin09; it can be frustrating. Thankfully the fix is pretty simple.
Depending on the device model and software version you have, you may need to modify these steps slightly.
1. Go to Settings
2. Go to Advanced Features > Side Key.
3. Under the Press and Hold section, toggle the selector from the Wake Bixby option to the Power Off Menu option.

If you have trouble finding this setting, try locating it using the search feature in Settings by entering keywords such as "side key" or "power menu."
