Samsung Apps and Services
This has never been a feature in Samsung Messages
Galaxy phones currently have two default messaging apps. Depending on your phone model, you either have Samsung Messages or Google Messages as your default messaging app. Both are available for all Galaxy phones.
This feature is possible in Google Messages, which is possibly your confusion in this matter.

Thanks for responding! You're unfortunately correct. It looks like the other posts I read were fake news. It's hard to believe such a simple organizational feature has not been implemented yet.
