Call assist button does not show up in the phone app on fold5

Are you using the Samsung Phone app? The Call Assist button won't appear on other calling apps.

When I try this I get a message saying : backup failed, setup finished. And then I get into normal mode

I still get the message. But then I read that my phone should be connected to my pc in order to solve this problem and get into reset mode. Do you think that it would be a good idea? Yes, try connecting to a PC and repeating the steps. This will not reset your phone. Btw, apologies for the delay. I don't receive notifications from your replies unless you hit the "reply" button below my comment.

Before we continue I would like to check if I really am using the Samsung phone app. How can I check this?

Settings>Apps>Phone>scroll down to the bottom to find the Version number. It's a green icon and should be version 15.1.69, or close to it.
