I tried to hold a volume down button and power button at same time but keep coming back to a screen to power off, restart, and emergency mode plus settings... help

Don't keep them down.
Just hit once both at the same time

It does take some practice to push the power and volume down buttons quickly and at the same time. Another option is to use Google assistant voice command, "Hey Google, take a screenshot." Or a screenshot app:https://www.androidauthority.com/best-screenshot-apps-android-883372/
