My phone had an update and noe my IG videos with music are jumping and freezing.

If that plus uninstallation then reinstallation were ineffective, it may be time to try a factory reset. Back up everything you can prior by following the backup guide in this guide: https://www.samsung.com/us/support/answer/ANS00062029/

If the above troubleshooting doesn't resolve this behavior, since this occurred after an update, it would be best to contact Instagram app developers for further support, as it could be a compatibility issue with your version of Android.

Try clearing the cache from the Instagram app. If that doesn't help, please try rebooting your phone into recovery mode and then select the clear cache from the partition option,
