Is there a way to edit messages with Google Message?

Yes, you can. The recipient also has to to have RCS. On the text you wish to edit, long press on the text, on the top if available you will see a :pencil: icon.

We both have RCS on but it doesn't give the option to edit the message.

It hasn't been released fully yet. I have Google Messages Beta since 2020, I get the features before the public does, every Android phone in my social circle also has the Beta because I set up their phones with it.
It is coming

That option is slowly rolling out. It's in open beta A/B groups look at the version of Google messages you have
