Ever since I updated my phone last week I've noticed that the screen colors look dull, like washed out. I haven't dropped my phone or done nothing else to damage the screen or changed settings.

As @SilliestGoose suggested, make sure Eye comfort shield isn't on. You confirmed this was not the case, so there are additional settings you can check out.
Check that Adaptive color tone is not on as well in Settings > Display. Navigate to Settings > Display > Screen mode, and adjust other settings accordingly. In this case, you would likely select Vivid and adjust the white balance warmth or cool. You can go to Advanced settings on the same page and customize the vividness as well as the white balance further.
If the settings are not helping at all, it is possible troubleshooting may be necessary. First thing would be to check that a third-party application is not changing your display settings for you or dulling/washing the colors out.
