Galaxy Watch
When I go to register for the OneUI 6 Watch beta, I go to the button for Watch5. First, it says, "This model is not supported." So I went to try the Watch5 Manager beta and Health Beta, it tells me I'm not eligible for participation. Is it possibly because I have an LTE version? What do I do here?

You accept the fact that your watch is not eligible. It's Bluetooth only models, so if yours is LTE, you are aitomatically out.

Galaxy Watch@AJMiller As the notice stated, the beta is available for BT model only. Since you have an LTE model, you can not participate.

Confirm the eligibility requirements, ensuring your model is included. Update the Samsung Members, Galaxy Wearable, and Samsung Health apps to their latest versions, clear the cache of the Samsung Members app, and try registering again later
