Galaxy WatchHello, welcome to the Samsung Community and thank you for your feedback. I understand your concerns with the Samsung Health App and I will be more than happy to look into this with you.
Auto Pause will automatically pause your workout after a period of inactivity. To disable this feature Open your Samsung Health App, then click Exercise, tap Choose Workout (choose workout to edit settings), Click Auto Pause and turn it off
In addition, here is a link to use Automatic Workout detection on your Samsung Smartwatch:

If this does not help, I would encourage you to submit an error report.
Steps for Submitting error Report via Wearables App:
- Launch the Wearable app icon Galaxy Wearable app
- Tap on 3 lines icon
- Select Contact us
- Tap on Error Reports
- Tap on Frequency
- Choose between Once, Often, or Sometimes
- Tap on the text box and explain the issue you are facing with your Galaxy device. If you would like to add any screen recordings or screenshots to your error report tap on the paperclip icon. Once you are ready to send your error report to select send icon. Please include "#SCommunity" within the details.
