Depends on which email application you are using.

I have email application that came with the note 10. I think it is Samsung email application.

Give these steps a try: 

1. Launch the Email app from your Home screen or the app drawer. It's an envelope with a red "@" over the top of it.
2. Tap the Menu button. It looks like "☰" in the upper left corner.
3. Tap on manage accounts at the bottom of the menu.

4. Tap on the email account you want to edit.

5. Tap on signature.
6. Tap on edit signature.
7. Type whatever you want for your signature.

8. Tap done.
